  • 0.25 cup all-purpose flour
  • 2.67 cups whole milk
  • 6 sage leaves (finely chopped)
  • 0.5 teaspoon thyme (finely chopped)
  • Kosher salt
  • 2 teaspoons black peppercorns (plus ground pepper for seasoning)
  • 2 bay leaves

Instructions

  1. Preheat your oven to 375°F and prepare an ice water bath.
  2. Blanch pearl onions in boiling salted water for 1-2 minutes; transfer to the ice bath, cool, drain, and peel.
  3. Simmer pearl onions with black peppercorns and bay leaves in fresh boiling water until tender (5-8 minutes). Drain well.
  4. In a medium saucepan, melt butter over low heat; stir in flour until bubbling. Gradually whisk in milk until thickened (about 5 minutes). Stir in sage and thyme; season to taste.
  5. Pour sauce over onions in a baking dish and bake for about 20 minutes until bubbling.
