  • 2 medium eggplants (pierced with a knife or fork)
  • ¼ cup tahini
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil (plus more for serving)
  • 2 garlic cloves
  • ½ teaspoon sea salt
  • Finely chopped fresh parsley
  • Smoked paprika
  • Red pepper flakes (optional)
  • Pita bread
  • Veggies

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each pierced eggplant in aluminum foil and place them on a baking sheet. Roast for 50 to 60 minutes until soft. Allow cooling.
  2. Peel the cooled eggplants and strain the flesh over a bowl for about 20 minutes to remove excess moisture.
  3. In a food processor, blend the drained eggplant with tahini, lemon juice, olive oil, garlic, and salt until smooth and creamy.
  4. Transfer to a serving dish and garnish with parsley and paprika. Serve with pita bread and vegetables.
