  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and sliced
  • 2 medium potatoes, peeled and cubed
  • 4 cups beef broth
  • 1 cup apple vinegar (optional)
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tbsp Worcestershire sauce
  • Crusty bread rolls for bowls

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sear the beef until browned (5-7 minutes) then set aside.
  2. In the same pot, sauté onions and garlic until softened (3-4 minutes). Add carrots and potatoes.
  3. Return beef to the pot; add broth, apple vinegar (if using), bay leaf, thyme, and Worcestershire sauce.
  4. Bring to a boil; reduce heat to low and simmer for 1.5 to 2 hours until beef is tender.
  5. While simmering, preheat oven to 375°F (190°C) and hollow out bread rolls.
  6. Serve the stew in each bread bowl garnished with fresh herbs if desired.
