  • 2 tsp black cocoa powder
  • 1 1/2 cups all-purpose flour
  • 1/2 cup black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 2 egg yolks (room temperature)
  • 1 1/2 tsp vanilla extract

Instructions

  1. Prepare the cheesecake filling by mixing cream cheese, granulated sugar, and vanilla until smooth. Chill in the refrigerator.
  2. For the cookie dough, cream together softened butter, brown sugar, and granulated sugar until fluffy. Add egg yolks one at a time and stir in vanilla.
  3. In another bowl, whisk flour, black cocoa powder, baking powder, and salt. Gradually mix dry ingredients into the wet mixture until combined.
  4. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. Scoop cookie dough, flatten it in your palm, place a teaspoon of cheesecake filling in the center, and fold the dough around it to form a ball. Roll in black cocoa sugar before placing on the baking sheet.
  6. Bake for about 10 to 12 minutes until set around edges but soft in the center. Cool on wire racks.
