  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 3/4 cups granulated sugar
  • 2 large eggs, room temperature
  • 1 1/4 cups buttermilk, room temperature
  • 1/2 cup vegetable or canola oil
  • 2 tsp vanilla extract
  • 1 tsp white vinegar
  • 1 tsp red gel food coloring
  • 1 1/2 cups (3 sticks) unsalted butter, room temperature
  • 1 cup (8 oz) full-fat cream cheese, room temperature
  • 1 Tbsp vanilla extract
  • 1 tsp fine salt
  • 7 cups powdered sugar
  • 3 Tbsp heavy whipping cream, room temperature
  • 1/2 cup seedless raspberry or strawberry jam
  • 3 Tbsp water

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two round baking pans.
  2. Mix dry ingredients: cake flour, cocoa powder, baking soda, and salt in one bowl.
  3. In another bowl, cream together butter and sugar until fluffy. Add eggs one at a time along with buttermilk, oil, vanilla extract, vinegar, and food coloring until well combined.
  4. Gradually mix the dry ingredients into the wet mixture until just blended.
  5. Pour batter evenly into prepared pans and bake for about 27 minutes or until a toothpick comes out clean.
  6. Let cakes cool completely before removing from pans.
  7. For the frosting, beat together butter and cream cheese; gradually add powdered sugar and cream for desired consistency.
  8. Assemble the cake by layering with raspberry jam filling between the cake layers, then frost with pink buttercream.
