  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 4 tbsp butter, divided
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1 lb rigatoni pasta
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • Salt to taste
  • Optional: chopped chives for garnish

Instructions

  1. Cook rigatoni according to package instructions until al dente; drain.
  2. Toss cubed chicken with olive oil and seasonings.
  3. In a large skillet, heat 2 tablespoons of butter and cook chicken until golden brown; set aside.
  4. In the same skillet, melt remaining 2 tablespoons of butter and sauté minced garlic.
  5. Whisk in flour, then gradually add milk and broth; bring to a simmer.
  6. Stir in cheeses until melted; season with salt.
  7. Combine pasta and chicken with sauce; toss to coat.
