  • 1 lb boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 4 tbsp unsalted butter
  • 8 oz Velveeta cheese
  • 1 cup whole milk
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 4 cloves garlic, minced
  • 1 cup all-purpose flour
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh parsley or chopped chives (optional)

Instructions

  1. Cook rotini pasta in salted boiling water until al dente, about 9–10 minutes. Reserve 1 cup of pasta water, then drain.
  2. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. In a skillet, heat olive oil over medium-high heat; cook chicken for 6–8 minutes until golden brown and cooked through.
  4. In the same skillet, melt butter; add minced garlic and cook for 1 minute.
  5. Whisk in flour to create a roux; gradually stir in milk until smooth. Simmer until slightly thickened.
  6. Lower heat; add Velveeta and cream cheese until melted. Stir in mozzarella and Parmesan.
  7. Combine cooked pasta and chicken into the sauce; toss well to coat.
