1 lb boneless, skinless chicken breasts
12 oz rotini pasta
4 tbsp unsalted butter
8 oz Velveeta cheese
1 cup whole milk
2 tbsp olive oil
2 tbsp Cajun seasoning
1 tsp garlic powder
1 tsp smoked paprika
4 cloves garlic, minced
1 cup all-purpose flour
4 oz cream cheese, softened
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Salt and black pepper, to taste
Fresh parsley or chopped chives (optional)
Instructions
Cook rotini pasta in salted boiling water until al dente, about 9–10 minutes. Reserve 1 cup of pasta water, then drain.
Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
In a skillet, heat olive oil over medium-high heat; cook chicken for 6–8 minutes until golden brown and cooked through.
In the same skillet, melt butter; add minced garlic and cook for 1 minute.
Whisk in flour to create a roux; gradually stir in milk until smooth. Simmer until slightly thickened.
Lower heat; add Velveeta and cream cheese until melted. Stir in mozzarella and Parmesan.
Combine cooked pasta and chicken into the sauce; toss well to coat.
