  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp chili flakes (optional)
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 (13.5 oz) can coconut milk
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped, for garnish
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • ½ cup plain yogurt, room temperature

Instructions

  1. Prepare ingredients by chopping onions, mincing garlic, and grating ginger.
  2. In a large pot over medium heat, sauté chopped onions in vegetable oil until translucent. Add minced garlic and ginger; cook until fragrant.
  3. Brown beef stew meat in the pot until all sides are cooked.
  4. Stir in curry powder and chili flakes, then add coconut milk, beef broth, drained chickpeas, and tomato paste. Season with salt and pepper.
  5. Bring to a gentle boil, reduce heat to low, cover, and simmer for 45 minutes to an hour until beef is tender.
  6. For the garlic naan, mix flour, salt, baking powder, and yogurt into a dough; let rest for 20 minutes.
  7. Roll out dough into flat rounds and cook on a hot skillet until golden brown on both sides.
  8. Serve the curry garnished with fresh cilantro alongside warm garlic naan.
