  • 2 lbs beef chuck or brisket, cut into large chunks
  • 1 tablespoon vegetable oil
  • 1 large onion, finely sliced
  • 4 garlic cloves, minced

  • Coconut milk

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Sear beef chunks until browned on all sides; remove and set aside.
  2. In the same pot, sauté onions until translucent. Add garlic and ginger; cook until fragrant.
  3. Stir in curry powder and return the beef to the pot.
  4. Pour in enough broth to partially cover the beef, bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours until beef is tender.
