  • 2.5 lbs beef chuck or stew meat, cut into large chunks
  • 2 Tbsp coconut oil (or vegetable oil)
  • 1 large onion, finely sliced
  • 4 garlic cloves, minced
  • 1 Tbsp fresh ginger, grated
  • 2 Tbsp red curry paste (or curry powder)
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp ground cinnamon
  • 1 tsp chili flakes (optional, for heat)
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth (or stock)
  • 1 Tbsp tomato paste
  • 2 Tbsp brown sugar or honey
  • 1 Tbsp fish sauce (or soy sauce/tamari)

Instructions

  1. Cut beef into chunks and slice the onion; mince garlic and grate ginger.
  2. Heat coconut oil in a large pot over medium heat; sauté onion until translucent, then add garlic and ginger until fragrant.
  3. Add red curry paste, cumin, turmeric, cinnamon, and optional chili flakes; cook for about 2 minutes.
  4. Brown the beef in the pot for about 5–7 minutes.
  5. Stir in coconut milk, beef broth, tomato paste, and brown sugar or honey; bring to a gentle simmer.
  6. Cover and let simmer on low heat for about 2–3 hours until tender.
  7. Serve over jasmine rice.
