  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp ground cumin
  • 1 tsp chili powder (optional for heat)
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup chicken broth
  • 1 tsp sugar

Instructions

  1. Prepare the ingredients by chopping the onion, mincing the garlic, and grating the ginger.
  2. In a large skillet over medium heat, add vegetable oil and brown the chicken pieces on all sides. Remove and set aside.
  3. In the same skillet, sauté the onion, garlic, and ginger until translucent.
  4. Stir in curry powder, turmeric, cumin, and chili powder (if using) for 1-2 minutes until fragrant.
  5. Add coconut milk and chicken broth; stir well. Return chicken to the skillet.
  6. Cover and simmer on low heat for about 20-25 minutes until chicken is fully cooked.
