  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar, packed
  • 2 tsp cinnamon
  • 5 Tbsp unsalted butter, softened
  • 1 1/4 cups all-purpose flour, spooned and leveled
  • 3/4 cup cake flour, spooned and leveled
  • 1 tsp cornstarch
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 8 Tbsp unsalted butter, cold, cut into cubes
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 Tbsp unsalted butter, melted (for icing)
  • 3 Tbsp heavy cream or milk (for icing)
  • 1 cup powdered sugar, sifted (for icing)
  • 1 tsp vanilla (for icing)
  • pinch salt (for icing)

Instructions

  1. Prepare the streusel by mixing flour, brown sugar, cinnamon, and salt; add softened butter until crumbly.
  2. Preheat oven to 400°F (200°C) and line baking sheets with parchment.
  3. Combine dry ingredients (both flours, cornstarch, cinnamon, baking soda, baking powder, salt) in a bowl.
  4. Cream cold butter and sugars in a stand mixer until smooth; mix in egg and vanilla.
  5. Gradually add dry ingredients until fully incorporated; shape into balls on baking sheets.
  6. Create indents in each cookie and fill with streusel; bake for 8-11 minutes.
  7. Cool before drizzling with icing made from melted butter, powdered sugar, milk, and vanilla.
