  • 1.5 lbs beef chuck, cut into cubes
  • 1 tbsp coconut oil
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder, adjust to taste
  • 1 tsp garam masala
  • 1 can chickpeas (14 oz), drained and rinsed
  • 1 can diced tomatoes (14 oz)
  • 1 can full-fat coconut milk (14 oz)
  • Salt and pepper to taste
  • Fresh cilantro and lime juice for garnish
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup plain yogurt

Instructions

  1. Heat coconut oil in a large pot over medium heat. Brown the beef cubes seasoned with salt and pepper for about 5-7 minutes.
  2. Add diced onion; cook until translucent (3-4 minutes). Stir in minced garlic and grated ginger; cook until fragrant (1 minute).
  3. Add spices (cumin, coriander, turmeric, smoked paprika, chili powder, garam masala) to coat the beef.
  4. Stir in chickpeas, diced tomatoes with juice, and coconut milk. Bring to a simmer.
  5. Reduce heat and let simmer uncovered for 20-25 minutes to thicken the sauce.
  6. Prepare garlic naan by mixing flour, baking powder, salt, and yogurt until soft dough forms. Roll out into ovals and bake at 400°F (200°C) for about 10 minutes until golden.
  7. Serve curry garnished with cilantro and lime juice alongside warm garlic naan.
