  • 1 lb boneless skinless chicken breasts, cut into thick bite-sized pieces
  • 12 oz rotini or fusilli pasta, twisted
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Cook the pasta in salted boiling water until al dente, about 8-10 minutes. Reserve ½ cup of pasta water before draining.
  2. In a skillet, heat olive oil and butter over medium-high heat. Add chicken seasoned with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Sear for 8-10 minutes until cooked through.
  3. In the same skillet, melt additional butter and sauté minced garlic for 1 minute. Add heavy cream and simmer.
  4. Stir in Velveeta until melted, then mix in cheddar and mozzarella cheeses until creamy.
  5. Combine cooked pasta with sauce and add reserved pasta water if needed for consistency.
