  • 10 oz rotini pasta
  • 1 cup heavy cream
  • 4 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the rotini pasta in a large pot of salted boiling water until al dente. Drain, reserving ½ cup of pasta water.
  2. Season chicken with Cajun seasoning, Italian seasoning, salt, and pepper. Heat olive oil in a skillet over medium-high heat; sear chicken until golden-brown.
  3. Lower heat; add butter and garlic to the skillet and sauté until fragrant.
  4. Stir in heavy cream, then add Velveeta cubes until melted. Mix in mozzarella and Parmesan; adjust the consistency with reserved pasta water if needed.
  5. Toss cooked rotini with the sauce until well coated.
