  • 4 tbsp unsalted butter (divided)
  • 4 cloves garlic (minced)
  • 1 lb rotini pasta
  • 4 cups heavy cream
  • 1 cup grated Parmesan cheese (plus more for garnish)
  • 1/2 cup chicken broth
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. 1. Season chicken cubes with Cajun seasoning, smoked paprika, salt, and pepper. Heat olive oil in a large skillet over medium-high heat and cook until golden brown (6-8 minutes). Remove from skillet.
  2. 2. Cook rotini according to package directions; drain and reserve 1 cup of pasta water.
  3. 3. In the same skillet, melt remaining butter and sauté minced garlic until fragrant. Add heavy cream and chicken broth; bring to simmer.
