  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup cubed Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 oz cream cheese, softened
  • ½ tsp Italian seasoning
  • Rigatoni pasta

Instructions

  1. Cook rigatoni in salted boiling water until al dente. Reserve ½ cup pasta water and drain.
  2. Season chicken strips with Cajun seasoning and paprika. Sear in a skillet with olive oil and butter until golden brown.
  3. In the same skillet, add remaining butter and garlic; sauté briefly. Pour in heavy cream and chicken broth, then whisk in softened cream cheese until smooth.
  4. Stir in cheeses until melted and thickened; season with Italian seasoning.
  5. Toss cooked rigatoni in the sauce, adding reserved pasta water if needed for consistency.
  6. Plate the pasta and top with Cajun chicken strips; garnish as desired.
