  • 500g chicken breast (cubed)
  • 200g mushrooms (sliced)
  • 1 red bell pepper (sliced)
  • 3 garlic cloves (minced)
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 200g jasmine or long-grain rice
  • 300g fresh asparagus
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • Salt & black pepper to taste
  • Cornstarch mixed with 2 tbsp water

Instructions

  1. Cook the rice: In a pot, bring 400ml water to a boil. Add the rice and a pinch of salt. Reduce heat, cover, and simmer for about 15-20 minutes until tender.
  2. Prepare the asparagus: In a pan, heat olive oil over medium heat. Add asparagus seasoned with salt and pepper; roast for about 8-10 minutes until tender-crisp.
  3. Make the stir-fry: Heat sesame oil in a wok over medium-high heat. Sauté minced garlic until fragrant (about 30 seconds). Add cubed chicken; cook until golden brown (5-7 minutes). Toss in sliced mushrooms and bell pepper; cook for an additional 3-4 minutes. Stir in soy sauce, hoisin sauce, and cornstarch slurry; cook until thickened.
  4. Serve hot over rice with roasted asparagus on the side.
