Garlic Parmesan Duchess Potatoes are a stunning addition to any meal, combining creamy mashed potatoes with the rich flavors of roasted garlic and Parmesan cheese.   • 1 large bulb of garlic
  • 1.3kg / 2.8lbs baking potatoes (such as Russets)
  • 5 tablespoons butter (2 tbsp melted, remaining at room temperature)
  • 2 tablespoons heavy cream (at room temperature)
  • 60g / 3/4 cup freshly grated Parmesan cheese
  • 4 large egg yolks
  • Fresh parsley, for garnish
  • Olive oil, salt, and pepper, to taste

Instructions

  1. Roast the Garlic: Slice the tip off the bulb, drizzle with olive oil, wrap in foil, and bake at 180°C/356°F for about 50-60 minutes until soft.
  2. Prepare the Potatoes: Peel and dice the potatoes. Boil them in salted water until fork-tender; drain and allow to steam dry for about five minutes.
  3. Make the Mash: In a pot, mash the drained potatoes with butter and cream until smooth. Stir in roasted garlic and Parmesan cheese; season with salt and pepper. Mix in egg yolks one at a time.
  4. Pipe the Potatoes: Use a piping bag fitted with a large star tip to pipe swirls onto a lined baking tray.
  5. Bake and Serve: Drizzle melted butter over each piped dome and bake at 200°C/400°F for about 15-20 minutes until golden brown. Garnish with fresh parsley before serving.
