  • 24 lasagna noodles
  • 4 cups cooked chicken, shredded
  • 4 cups spinach, chopped
  • 4 cups ricotta cheese
  • 4 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 6 cups marinara sauce
  • Salt and pepper to taste
  • Black olives for “eyes”

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions, drain, and set aside.
  3. In a mixing bowl, combine ricotta cheese with chopped spinach; season with salt and pepper.
  4. In a baking dish, layer marinara sauce, followed by noodles, ricotta-spinach mixture, shredded chicken, and mozzarella cheese. Repeat layers until ingredients are used up.
  5. Cut mozzarella into ghost shapes for the top and use olives as eyes.
  6. Add Parmesan on top and bake covered for 30 minutes; uncover and bake an additional 10–15 minutes until golden brown.
