  • 1 cup plain full-fat Greek yogurt

  • 1 shallot (minced)
  • 3 tablespoons minced garlic
  • 1 lemon (juiced and zested)
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon paprika
  • 1 tablespoon dried oregano

Instructions

  1. Pat dry the chicken thighs and set aside.
  2. In a mixing bowl, combine Greek yogurt, dill, shallots, garlic, lemon juice & zest, salt, pepper, paprika, and oregano. Mix well.
  3. Add chicken thighs to the marinade; ensure they are well coated.
  4. Cover and refrigerate for at least 1 hour or overnight for best results.
  5. Preheat grill to 400°F (200°C).
  6. Grill marinated chicken thighs for 8 to 10 minutes per side until cooked through (internal temperature should reach 165°F).
  7. Allow chicken to rest for five minutes before serving.
