  • 1 chicken breast, cut into chunks
  • 1 cup sweet potatoes, peeled & cubed
  • 1 cup broccoli florets
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Toss sweet potato cubes with half of the olive oil, smoked paprika, salt, and black pepper. Spread them on a baking tray and roast for 20-25 minutes until golden brown.
  2. While the sweet potatoes roast, season chicken chunks with garlic powder, onion powder, salt, and black pepper. Heat a grill pan over medium heat with a bit of oil and grill the chicken for about 6-8 minutes until charred and cooked through.
  3. In another pan, heat remaining olive oil over medium heat. Sauté broccoli florets for about 5-6 minutes until bright green and slightly tender. Season with salt and chili flakes if desired.
  4. Serve warm by arranging grilled chicken alongside roasted sweet potatoes and sautéed broccoli. Optionally drizzle with lemon juice.
