Halloween Slime Cupcakes are a fun and festive treat that will elevate any celebration. These delightful cupcakes feature a moist vanilla base tinted black, filled with zesty lime custard, and topped with vibrant green buttercream, making them visually striking and deliciously unique.

  • 175 g baking spread (or unsalted butter)
  • 175 g caster sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 175 g self-raising flour
  • 25 g black food coloring
  • 200 g unsalted butter (for frosting)
  • 400 g icing sugar
  • Green and yellow food coloring (for frosting)
  • 150 g tinned custard (for filling)
  • Candy eyes and green sprinkles (for decoration)

Instructions

  1. Preheat your oven to 140C Fan/325F/Gas Mark 3. Line a cupcake tin with black cases.
  2. In a mixing bowl, beat the baking spread and caster sugar together until fluffy. Add eggs one at a time along with vanilla extract, mixing well after each addition. Fold in the self-raising flour and then add black food coloring.
  3. Divide the batter into the lined cupcake cases and bake for 25-30 minutes until a skewer inserted comes out clean. Cool completely on a wire rack.
  4. Once cooled, remove some cake from the center of each cupcake and fill with green-tinted custard.
  5. Prepare the buttercream by mixing softened butter with icing sugar until smooth; add vanilla extract and color to achieve vibrant green frosting.
  6. Decorate cupcakes generously with frosting using a piping bag, then top with candy eyes and green sprinkles.
