  • 500 g chicken breast, cut into bite-sized pieces
  • 1 cup broccoli florets
  • 1 cup green beans, trimmed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • Salt & pepper to taste
  • 1 cup cooked mixed rice (brown, wild, and white rice blend)

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook until golden brown and fully cooked. Remove from the pan.
  2. In the same pan, add the remaining tablespoon of oil. Sauté minced garlic for about 30 seconds until fragrant. Add broccoli, green beans, red bell pepper, and yellow bell pepper; stir-fry for 3-4 minutes until tender-crisp.
  3. Return the cooked chicken to the pan. Pour in soy sauce, honey or maple syrup, sesame oil, salt, and pepper. Mix well and stir-fry for an additional 2 minutes to combine flavors.
  4. Serve warm over a bed of mixed rice.
