  • 12 chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp chili flakes
  • Salt & pepper to taste
  • 2 medium potatoes, cut into wedges
  • 1 small sweet potato (optional), cut into fries
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt & pepper
  • 2 medium tomatoes, chopped
  • 1 cucumber, chopped
  • Salt & pepper
  • Splash of olive oil or vinegar (optional)
  • 1 cup plain yogurt (Greek or regular)
  • 1 tsp dried mint or dill
  • 1 garlic clove, minced
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Marinate chicken breasts in olive oil, oregano, garlic powder, chili flakes, salt, and pepper. Bake for 20-25 minutes until fully cooked.
  3. Toss potato wedges with olive oil, paprika, salt, and pepper; roast for 25-30 minutes until golden and crispy.
  4. Mix chopped tomatoes and cucumber in a bowl; season with salt and pepper.
  5. Prepare the yogurt dip by combining yogurt, dried mint or dill, minced garlic, salt, and pepper; chill.
  6. Serve chicken alongside roasted potatoes and salad with yogurt dip on the side.
