  • 3 pounds roma or plum tomatoes
  • 8 cloves garlic
  • 3 tablespoons olive oil
  • 2 yellow onions
  • ½ cup packed basil leaves
  • ½ teaspoon dried oregano
  • 12 cups water or vegetarian broth
  • Freshly ground salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Halve the tomatoes and place them alongside peeled garlic cloves on the baking sheet. Drizzle with olive oil and season generously with salt and pepper.
  3. Roast for 40-45 minutes until caramelized.
  4. In a large pot over medium heat, heat olive oil and add sliced onions, stirring occasionally until golden brown (about 20 minutes).
  5. Let the roasted tomatoes and garlic cool for about 10 minutes, then blend until smooth in a food processor or blender.
  6. Add blended mixture back into the pot along with basil leaves, oregano, and broth or water; simmer for about 10 minutes before serving.
