  • Leeks
  • Fennel bulb
  • Parsnip
  • Carrot
  • Celery

  • Canned tomatoes
  • Navy beans
  • Chicken stock/broth
  • Kale
  • Italian flat-leaf parsley
  • 1 (16 ounce) package gnocchi (optional)

Instructions

  1. Cook gnocchi according to package instructions; set aside.
  2. In a large soup pot over medium-high heat, heat oil and brown the crumbled spicy sausage.
  3. Add leeks, fennel, parsnip, carrot, and celery; season with salt, pepper, and Italian seasoning. Sauté until tender.
  4. Stir in garlic until fragrant; add chopped tomatoes and navy beans followed by chicken stock/broth.
  5. Cover and simmer for about 20 minutes until veggies are tender.
  6. Stir in chopped kale and parsley; add lemon juice to taste.
  7. Serve hot over cooked gnocchi and garnish with olive oil and optional parmesan cheese.
