  • 4 2/3 cups Rice Krispies Cereal
  • 4 tablespoons salted butter
  • 10 ounces vegan marshmallows
  • 1 teaspoon peppermint extract
  • About 10 drops green food coloring
  • 3/4 cup mini chocolate chips

  1. Grease a large mixing bowl and set aside.
  2. Pour Rice Krispies Cereal into the greased bowl.
  3. Melt salted butter in a medium-large saucepan over low heat.
  4. Add vegan marshmallows to the melted butter, stirring gently until three-quarters are melted.
  5. Remove from heat and stir until smooth.
  6. Mix in peppermint extract and green food coloring.
  7. Pour the melted mixture over the cereal and toss gently to coat.
  8. Let cool for 5-8 minutes before mixing in mini chocolate chips (reserve some for topping).
  9. Spread the mixture into a greased 8-inch pan, pressing down firmly.
