  • 1/2 cup plant-based butter
  • 1/3 cup pumpkin puree
  • 3 tbsp maple syrup (or honey)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice

Instructions

  1. Heat a large non-stick skillet over medium heat and melt a small amount of butter.
  2. In a bowl, whisk together eggs, milk, pumpkin puree, vanilla extract, cinnamon, and pumpkin pie spice.
