Ingredients

  • 2 double shots of blonde espresso
  • ¼ cup packed light brown sugar
  • 2 tbsp pumpkin puree
  • 12 cups ice cubes
  • Cold oat milk (to taste)
  • Cinnamon sticks or pumpkin pie spice

Instructions

  1. In a small saucepan, whisk together brown sugar, pumpkin puree, cinnamon or pumpkin pie spice, and warm water. Simmer on low heat for 2-3 minutes until thickened.
  2. Store the syrup in an airtight container in the fridge for up to one week.
  3. In a sealable jar, add one double shot of espresso and 1-2 tablespoons of syrup. Add ice cubes and shake vigorously for 20-30 seconds.
  4. Pour into a glass without leftover ice cubes, add fresh ice if desired, and fill with oat milk. Dust with additional pumpkin pie spice before serving.
