  • 2 shredded medium beetroots
  • 2 diced ripe avocados
  • 2 grilled chicken breasts, sliced

  • 1 cup Greek yogurt
  • juice of 1 lemon
  • extra virgin olive oil
  • salt
  • pepper

Instructions

  1. Cook the quinoa according to package instructions until light and fluffy.
  2. Boil the chickpeas until tender if not pre-cooked.
  3. While the quinoa cooks, halve cherry tomatoes, shred beetroots, and dice avocados.
  4. Grill chicken breasts until fully cooked; allow resting before slicing.
  5. In a large mixing bowl, whisk together Greek yogurt, lemon juice, olive oil, salt, and pepper.
  6. Distribute quinoa into serving bowls; layer with chickpeas, tomatoes, beetroots, avocado slices, grilled chicken, and top with microgreens.
