  • 240 ml heavy cream
  • 225 g large shrimp, peeled and deveined
  • 2 red snapper fillets (approximately 170 g each)
  • 1 tablespoon Cajun seasoning
  • 50 g grated Parmesan cheese
  • 28 g unsalted butter
  • 60 g shredded cheddar cheese
  • 15 ml olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon hot sauce (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Grits: Bring chicken broth to a boil in a saucepan. Gradually whisk in grits and reduce heat to low. Cook uncovered for 20-25 minutes until thickened. Stir in heavy cream, butter, and cheddar cheese; season with salt and pepper.
  2. Cook the Shrimp: Toss shrimp with Cajun seasoning. Heat olive oil and butter in a skillet over medium-high heat. Sauté garlic, then add shrimp and cook until pink, about 2-3 minutes per side.
  3. Cook the Red Snapper: Season snapper fillets with Cajun seasoning. In the same skillet, cook fillets for 3-4 minutes per side until golden brown.
  4. Make the Cajun Cream Sauce: Melt butter in the skillet, sauté garlic, then add chicken broth and seasonings. Stir in heavy cream and simmer until thickened; mix in Parmesan cheese.
  5. Serve: Spoon grits onto plates, top with red snapper and shrimp, then drizzle with sauce.
