  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 1/2 cup grated parmesan cheese, divided
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roast the garlic by cutting the top off, seasoning with olive oil and salt, wrapping in foil, and baking for about 30 minutes.
  3. Grease a baking dish with butter and thinly slice the potatoes.
  4. Layer the potatoes upright in the baking dish until fully arranged.
  5. In a saucepan, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; heat until combined but not boiling.
  6. Squeeze the soft roasted garlic into the creamy mixture; stir until well blended.
  7. Pour the creamy mixture over the layered potatoes and cover with foil.
  8. Bake for 40 minutes, then add remaining cheeses on top and bake uncovered for an additional 30 minutes until bubbly and golden brown.
  9. Let cool slightly before serving; garnish with fresh chives.
