  • 6 roma tomatoes (halved)
  • 1 cup cherry tomatoes (whole)
  • 1 medium yellow onion (roughly chopped)
  • 1 head of garlic (halved)
  • 1/4 cup extra-virgin olive oil
  • 1 cup vegetable broth (or chicken broth)
  • 1/4 cup heavy cream (adjust to taste)
  • 5 large basil leaves
  • 1 teaspoon balsamic vinegar
  • Salt and pepper to taste
  • 1 French or sourdough baguette (thinly sliced)
  • Shredded Gruyère cheese

Instructions

  1. Preheat your oven to 400°F.
  2. On a baking sheet, combine halved roma tomatoes, whole cherry tomatoes, chopped onion, halved garlic, olive oil, salt, and pepper. Toss until coated.
  3. Roast for 30–40 minutes until tender and slightly charred.
  4. If stovetop preferred, simmer the same ingredients in a pot over medium heat until soft.
  5. While vegetables roast, prepare the toasts: Drizzle olive oil on baguette slices and top with shredded Gruyère. Bake until golden and crispy, about 15 minutes.
  6. Blend the roasted vegetables with vegetable or chicken broth and basil until smooth.
  7. Adjust seasoning if needed and serve topped with crispy Gruyère toasts.
