  • 1 cup cooked white rice (jasmine or basmati)
  • 1 lb ground beef (or ground turkey/chicken)
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp sesame oil or olive oil
  • Salt & pepper to taste
  • 1 cup broccoli florets
  • 1 cup zucchini, chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, chopped
  • 1 cup sliced mushrooms
  • 1 tbsp soy sauce
  • 1 tsp olive oil
  • 1 tsp minced garlic

Instructions

  1. Prepare rice according to package instructions; set aside and keep warm.
  2. In a skillet over medium heat, add sesame oil and cook ground beef until browned. Stir in soy sauce, garlic powder, salt, and pepper until well combined and slightly caramelized.
  3. In another pan, heat olive oil over medium-high heat. Add minced garlic and all chopped vegetables. Stir-fry for 5-7 minutes until tender-crisp. Splash with soy sauce and toss to coat evenly.
  4. In serving bowls, layer a scoop of rice followed by ground beef and top with stir-fried veggies.
