  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare all ingredients by chopping onions, mincing garlic, and dicing carrots and celery.
  3. In a Dutch oven over medium-high heat, add olive oil and sear the beef cubes until browned on all sides (about 5–7 minutes). Remove and set aside.
  4. In the same pot, add onions, garlic, carrots, and celery; cook until softened (about 5 minutes).
  5. Return the beef to the pot and stir in diced tomatoes, beef broth, tomato paste, and herbs.
  6. Cover with a lid and transfer to the oven. Bake for about 2.5 to 3 hours until the beef is tender.
