  • 2 lbs lamb shoulder, cut into chunks
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can diced tomatoes (14 oz)
  • 1 cup plain yogurt
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 1 cup water or lamb stock
  • Fresh cilantro for garnish
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder

Instructions

  1. Sear lamb chunks in a large pot until browned on all sides; set aside.
  2. Sauté onions until translucent; add garlic and ginger until fragrant.
  3. Return lamb to pot with tomatoes, yogurt, tomato paste, spices, salt, pepper, and water or stock; mix well.
  4. Cover and simmer on low for at least 2 hours until tender.
  5. For garlic naan, mix flour and baking powder with water to form dough; roll out and cook on a hot skillet until golden brown.
  6. Serve curry hot garnished with cilantro alongside warm naan.
