  • ⅓ cup granulated sugar (for rolling)
  • ½ tsp cinnamon (for rolling)
  • 8 oz cream cheese, softened
  • 4 tbsp unsalted butter, softened
  • ½ tsp vanilla extract (for frosting)
  • ¼ tsp salt (for frosting)
  • 2½ cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter and granulated sugar until smooth.
  3. Add pumpkin puree, egg, and vanilla extract; mix until combined.
  4. In another bowl, whisk together flour, baking powder, cinnamon, salt, ginger, and nutmeg.
  5. Gradually add dry ingredients to wet mixture; combine until just mixed. Chill the dough for 30 minutes.
  6. Roll chilled dough into balls, coat in sugar/cinnamon mixture, and place on lined baking sheets.
