Ingredients

  • 3 large eggs
  • 1 tsp butter or olive oil
  • Salt & black pepper, to taste
  • 1 avocado, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1 cup microgreens or lambs lettuce
  • 1 slice whole grain or sourdough bread

Instructions

  1. In a mixing bowl, crack and whisk the eggs until well combined.
  2. Heat butter or olive oil in a non-stick skillet over low heat. Pour in the eggs and cook gently until just softly set. Season with salt and black pepper.
  3. While the eggs are cooking, slice the avocado, halve the cherry tomatoes, and slice the cucumber.
  4. Rinse the microgreens under cold water.
  5. To assemble, place scrambled eggs in the center of a serving bowl. Arrange slices of avocado, tomatoes, cucumber, and greens around it. Add a slice of whole grain or sourdough bread on one side.
  6. Optionally sprinkle chili flakes or drizzle olive oil before serving.
