  • 4 large eggs

  • 1 cup buttermilk
  • 1/2 cup pureed fresh strawberries
  • A few drops of pink food coloring
  • 1 cup powdered sugar
  • 23 tablespoons fresh strawberry puree
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 10-inch bundt or tube pan.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar until light and fluffy (about 4-5 minutes).
  4. Add eggs one at a time, mixing well after each addition; stir in vanilla extract.
  5. In another bowl, mix buttermilk and strawberry puree.
  6. Gradually add dry ingredients alternately with the buttermilk mixture to the batter, starting and ending with dry.
  7. If desired, fold in pink food coloring before pouring batter into the prepared pan.
  8. Bake for 70-80 minutes or until a toothpick comes out clean; cool in pan for 15 minutes before transferring to a wire rack.
  9. For the glaze: whisk powdered sugar, strawberry puree, and lemon juice until smooth; drizzle over cooled cake.
