  • 16 large white or cremini mushrooms
  • 8 oz cream cheese (softened)
  • 1/2 cup cooked turkey sausage
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic (minced)
  • 1 tablespoon fresh parsley (chopped)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 16 small olives (pitted)
  • Cooking spray or olive oil (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the mushrooms with a damp cloth and remove the stems, finely chopping them for the filling.
  3. In a mixing bowl, combine chopped mushroom stems, cream cheese, cooked turkey sausage, Parmesan cheese, garlic, parsley, salt, and pepper until well mixed.
  4. Stuff each mushroom cap with the filling and press down slightly.
  5. Arrange on a greased baking sheet and press an olive into the center of each mushroom.
  6. Bake for about 20-25 minutes until mushrooms are tender and filling is bubbly.
