  • 1 tablespoon olive oil
  • 2 pounds extra lean ground turkey
  • 1 (28 fluid ounce) can diced tomatoes (with juices)
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 4 cloves garlic (minced)
  • 2 (14 fluid ounce) cans white kidney (cannellini) beans (drained)
  • Salt & pepper (to taste)

Instructions

  1. In a large pot over medium-high heat, add olive oil and chopped onion. Sauté until translucent, about 5 minutes.
  2. Add the ground turkey and cook until it's no longer pink, about 5 minutes. Break it apart as you stir.
  3. Stir in the diced tomatoes, chili powder, cumin, garlic, and drained beans. Mix well.
  4. Bring the mixture to a gentle simmer and cook for 15-20 minutes, stirring occasionally.
  5. Season with salt and pepper to taste before serving.
