  • 1/2 Cup Vegan/Soy-Free Mayo
  • 1 to 2 TB Nutritional Yeast
  • 1 TB Fresh Lime Juice
  • 1 Tsp Lime Zest
  • 1/4 Cup Chopped Cilantro
  • Chili Powder to taste
  • Black Pepper to taste
  • Salt to taste

Instructions

  1. Grill the corn on medium-high heat for about 10 minutes until slightly charred. Let it cool.
  2. Cut the kernels off the cob and place them in a large bowl.
  3. In another bowl, mix vegan mayo, nutritional yeast, lime juice, lime zest, chili powder, black pepper, and salt until smooth.
  4. Combine the dressing with the corn and mix in chopped cilantro until evenly coated.
  5. Adjust seasoning if necessary and serve immediately or chill in the fridge for an hour for enhanced flavors.
