  • 810 medium shrimp, peeled & deveined
  • 1 tsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & black pepper to taste
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup diced pineapple
  • 1 cup diced tomato
  • 2 tbsp diced red onion (optional)
  • 1 tbsp chopped cilantro
  • Juice of 1 lime
  • 1 cup cooked brown rice
  • Extra cilantro for garnish

Instructions

  1. In a skillet, toss shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Sear over medium heat for 2-3 minutes on each side until pink and slightly charred.
  2. In a mixing bowl, combine corn, diced pineapple, diced tomato, cilantro, lime juice, and salt. Mix well and set aside.
  3. Place cooked brown rice in a bowl or plate. Top with seared shrimp on one side and pineapple corn salsa on the other. Garnish with extra cilantro.
