Zucchini Feta Cottage Cheese Bake is a light and flavorful Mediterranean-inspired dish that’s perfect for brunch, lunch, or easy weeknight dinners.

  • 1 cup crumbled feta cheese (plus extra for topping)
  • 2 tbsp chopped fresh dill
  • 1 tbsp olive oil
  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1 cup cottage cheese
  • Salt and pepper to taste
  • 3 large eggs

Instructions

  1. Preheat your oven to 375°F (190°C) to ensure even cooking.
  2. In a mixing bowl, combine crumbled feta cheese, chopped dill, olive oil, cottage cheese, grated zucchini, eggs, salt, and pepper. Mix until well-blended.
  3. Grease a baking dish with olive oil and pour the mixture in, spreading it evenly. Top with additional feta cheese.
  4. Bake in the preheated oven for 30-35 minutes or until the top is golden brown.
  5. Allow to cool slightly before slicing and serving.
